Applesauce

Tis the season for applesauce!  This year I made quite a lot of applesauce from the tiny apples on our crab apple tree.  Crab apple sauce is not for everyone.  In fact, most people in our family have rejected it at this point, but I love it!  It packs a punch!  Oooo-la-lah!  Flavor!  I added a tiny bit of sugar to the crab applesauce so it would be edible.  Typically I do not add any sugar when I’m making applesauce.  I like a good, tart applesauce.  This week we got MacIntosh apples in our fruit CSA box.  MacIntosh apples also make an excellent applesauce.  It was delicious, but I kind of missed the kick from the crab apples.  The kidlets liked this batch better.  This weekend is applefest, and we plan on bringing home a large quantity of apples, which means my kitchen will be busy and my freezer will be full.  The work pays off in February when I can walk to the freezer and grab a jar that tastes like summer.
